Apple Cinnamon Cake

Apple Cinnamon Cake

-2 1/2 cup oat flour
-2 tsp baking powder
-1 tsp baking soda 
-2 tsp cinnamon 
-1 cup monk fruit or coconut sugar
-250g apples (peeled, cored and cut into cubes) 
-2 eggs
-85g ghee (or normal butter)
-3/4 cup almond milk
-1 tsp vanilla

1. Pre heat oven to 180 (C)
2. Put all dry ingredients in a large mixing bowl and stir until well combined. 
3. Add apple cubes and stir again until apple cubes are covered
4. Place ghee, eggs, milk and vanilla in a bowl and mix until well combined. 
5. Add the wet mixture into the dry mixture and whisk until combined (not too long otherwise it gets dry.
6. Transfer the batter to a greased baking tin and place in oven to bake for about 20-30 minutes. 
7. Leave to cool for about 20 minutes and sprinkle with some chopped almonds and cinnamon.
